Stats will only rise when accompanied by an attempted skill rise. It doesn't matter if all your skills are at cap, as long as one appropriate to the stat you are trying to raise is set 'up'.

I don't think there is a bug here, treasure hunters have been opening boxes below tree canopies in EC without a problem, simpy use ctrl + shift and target the object handle.

Do you see any system message at all? Check your journal, @Norry has suggested that your taming is not high enough to control the upgraded pet, so the system will not allow it.
